A delicious soup with some toppings for a lighter dinner

I always have in the fridge ready for the kids, but every now and then, when I eat it for dinner, I like to get creative and add some different toppings, because, let's be honest, soup is always one of the last choices when there's something more tempting to eat. I like soup, but if it's pretty and appealing, even better!


This time, I made a basic veggie cream, which is what I usually make for the kids: leek or onion, zucchini, and carrot. I use chicken broth to make it more flavorful, blend everything in the Vitamix, and sometimes add some cilantro, but not always. Simple, tasty, nutritious, and very creamy!


When the weather starts to get warmer, I like to eat these soups cold, usually straight from the fridge. Besides being more convenient, it's super refreshing. I had smoked salmon, low-fat cream cheese, and a sautéed a mix of shredded vegetables I got at Trader Joe's (something I almost always prep and have on hand), and decided to layer everything in the soup. I couldn't believe it when I tasted it. A simple soup that turned into a gourmet delight in 3 seconds! It was delicious, satisfying, fresh, and well... I couldn't keep it to myself, so here it is!

For the creamy soup, you will need:


  • 1 leek (white part only)

  • 2 medium zucchinis, peeled

  • 3 medium carrots, peeled

  • 1 teaspoon chicken broth (I used Better than Bouillon)

  • 1 cup of water


Wash and cut the vegetables and place them in a deep pot. Add the water and the broth, and let it cook for 20 minutes or until the vegetables are tender. Remove from heat and blend everything in a blender until it is completely creamy and smooth.


Toppings used:


  • Smoked salmon

  • Light cream cheese

  • Pre-sautéed broccoli and shredded carrot

  • "Everything but the bagel" seasoning (a mix of sesame seeds with dehydrated garlic and onion, salt, and poppy seeds)
