Protein waffles
These are probably the best waffles I've ever made! You already know I always have a secret (and protein-packed) ingredient up my sleeve, and this time I used low-fat cottage cheese. The texture turns out so fluffy and delicious that it's impossible not to want to make this recipe every day! Delicious and with the added benefit of being more filling due to its protein content – 100g of low-fat cottage cheese contains about 14g of protein! If that's not enough reason to convince you to try this recipe, then I don't know what is!
Ingredients for 4 waffles:
- 2 eggs
- 1 cup oat flour (or other flour of your choice) GET IT HERE
- 2/3 cup low-fat cottage cheese
- 1 tsp honey
- 1/2 tsp baking powder
- 2 tbsp water (or more to achieve a thick cake-batter consistency)
Toppings:
- Sliced strawberries
- A drizzle of honey
- A pinch of cinnamon
- 1 tbsp low-fat Greek yogurt (optional)
Preparation:
1. Preheat the waffle maker.
2. Mix all the ingredients in a bowl until smooth.
3. Cook the waffles according to your waffle maker's instructions.
4. Remove from the waffle maker and serve with your desired toppings.
Note: You can prepare the batter in advance and store it in the fridge for up to 3 days. You can freeze the waffles for up to 2 months.
